常々心がけているのは、「ニッチはいい。内輪はダメ。」です。小料理屋に例えると、ニッチなお店はどんなに辺鄙な場所でも日本中から客が来ます。内輪なお店は、やってる本人は楽しくても、近所のオッサンしか来ません。新しい客が入れないまま、オッサンが好む料理のみを出し続けることになります。
