More definition is fine if you're going for a coat that's more fur/hair-like, but it makes little sense on bird-like coats. Downy feathers fill out and smooth the shape, while the outer layer of feathers sit on top. You basically never see any muscle definition at all in birds.

Also, pet peeve: If you're drawing a dinosaur with more bird-like feathers, stop conforming to the musculature so much, or showing any muscle definition at all! Feathers play a huge part in shaping the wing too. I used the same base arm for drawing all three of these wings, but they all have different shapes because of the feathers. I suggest looking at the different types of wings birds have for ideas for this! pic.twitter.com/5CXxjNQR0v

Drawing wings in basically any pose is pretty simple once you break it down. So long as you know which direction the feathers are growing from the arm, you can get a fairly realistic appearance. (Taken from a current WIP of mine) pic.twitter.com/OxIeR0c3EB

Secondaries grow from the forearm, and primaries from the hand/2nd finger. When folded, the secondaries sit on top of the primaries. The secondaries tend to maintain their shape, while the primaries will overlap to create a slimmer looking shape. pic.twitter.com/vxdZf3fTii

Above is probably the most simple way to break down wing anatomy. Birds also have the Alula feathers, attached to the thumb. You could depict this too, but it's mostly useful for flighted animals. Flight feathers end at the forearm, so use scapulars to cover the shoulder.
